Culinary classes introduce students to nutrition, food preparation, and career skills. BASIC FOODS is an introduction to meal planning and cooking techniques. The emphasis is on nutrition as it relates to current food practices. Students prepare foods from different parts of the food pyramid including fruits, vegetables, grains, and dairy products. Students who receive a C or better in Basic Foods can elect the following classes: CULINARY I offers an opportunity to develop and apply higher level cooking skills. It includes an introduction to the food service industry as well as specific topics such as garnishing, seasonings, sauces, soups, poultry, and cake decorating. CULINARY II helps students develop advanced skills in the areas of meats, fish, sandwiches, baking, and pastry. Students learn about restaurant management while practicing quantity food production techniques. WORLD OF FOOD is an exploration of multicultural influences on eating patterns. Students study regional American, European, Mediterranean, and Asian cuisines. CULINARY CAFE provides experience in restaurant operation. Students manage both front of the house and back of the house operations as they prepare food for lunch, take-away meals, and special events in the district and community. |
